Tofu Veggie Sausage Scramble

Today for breakfast I decided to make a tofu scramble with whatever veggies I had on hand. For those of you who have never had a tofu scramble it is a vegetarian alternative to scrambled eggs which surprisingly taste and resemble real scrambled eggs but without the guilt!

Ok so I'll start by saying tofu is one of the cheapest and most versatile ingredients you can keep in your fridge. It also lasts a long time and has great health benefits, it really does have a bad rap!

Secondly, tofu scrambles are a perfect way to use up veggies in your fridge and they are great when you don't know what to make for breakfast because you can literally put WHATEVER your little heart desires in there! The possibility are endless!

For the one I made, I used things I happened to have on hand, and for this recipe you will need :

3-4 oz extra firm tofu
1 Morningstar farms breakfast sausage patty
Half of a plum tomato
Chopped onion
Chopped mushrooms
Chopped broccoli
1 wedge laughing cow light Swiss
Salt
Pepper
Garlic powder
Olive oil

(Serves one)

To start, I prepared all of my ingredients for the pan. Chop all of your veggies into small pieces. Then I poked a small hole in a corner of my tofu package and drained a little water out, if you try just tearing the package open you WILL have a mess! Next open the package and divide the tofu into five even blocks. I did this because the serving size is 3 oz or 1/5 of the pkg, but if you have a food scale by all means use that!

Next take one block and place it in a strainer, and with a paper towel press the excess water out of the tofu. Crumble it in your hands so it gets that scrambled egg texture and put it aside in a bowl.

Heat a medium sized frying pan with a little olive oil and add your onion, sauté for 2 min until its lightly golden on the edges. Next add your mushroom for 2 min then the broccoli. Sauté for a few minutes until the mushrooms are soft then empty veggies into a bowl and set aside.

Add the tofu to the pan, at this point you might want to drizzle a little more olive oil in the pan so it doesn't burn and stick. Spread the tofu evenly around and let it brown for a minute or two before stiring it around. Once you see the edges getting golden, make room and add the sausage patty. Brown the patty lightly on both sides then break it up with a fork into little bits and sauté with the tofu.

Once your tofu is a nice golden color throughout add your cooked veggies, tomatoes, laughing cow wedge and seasoning. Lower heat while doing this because you just want to get everything mixed together.

Serve with your favorite toast or alone and enjoy!
